The good stuff:

  • Plantains are an awesome source of energy (all the B-Complex Vitamins!)
  • They have lots of Vitamin C & Fiber…
  • … and more potassium than a banana
  • They are sweet- if you happen to have a sweet tooth 😀

You’ll need:

  • Ripe Plantains (ripe but not tooooo ripe)
  • Jerk Seasoning
  • A vegetable oil of your choice (but not olive oil)

The process:

  • Preheat oven to 400F / 200C
  • Cut the ripe plantain into 3 equal length pieces
  • Peel each piece
  • Then cut each piece into “fries”
  • On a large baking tray, spread out the plantain. Rub with a mixture of jerk seasoning and a BIT of oil
  • Bake for 15 – 20 mins.
  • And that’s it 🙂
