The good stuff:
- Plantains are an awesome source of energy (all the B-Complex Vitamins!)
- They have lots of Vitamin C & Fiber…
- … and more potassium than a banana
- They are sweet- if you happen to have a sweet tooth 😀
You’ll need:
- Ripe Plantains (ripe but not tooooo ripe)
- Jerk Seasoning
- A vegetable oil of your choice (but not olive oil)
The process:
- Preheat oven to 400F / 200C
- Cut the ripe plantain into 3 equal length pieces
- Peel each piece
- Then cut each piece into “fries”
- On a large baking tray, spread out the plantain. Rub with a mixture of jerk seasoning and a BIT of oil
- Bake for 15 – 20 mins.
